What do you think is the effect of the digestive enzyme on the hard egg white?

Have you tried this kind experimentation? Can you describe the hard egg white when it is mixed with the digestive enzyme in water?
I did an experimentation on this and I used Maalox as a digestive enzyme and I don’t see any effect.
Help pls.

What conditions do enzymes work best in?

In an experiment, we used visking tubing to act as a model small intestine, and filled it with starch solution.
We then tested the water that the visking tubing was in for starch to see what temperature the enzymes worked best at.
Would they work best in Ice water, 10 degree water, 30 degree water, sixty degree water, or boiling water?
